Is mild green chili powder from New Mexico really mild?
I thought I'd give it a try since I bought this a couple years ago in Deming New Mexico at Diaz Farms. They carry dozens of types of chili powder, I was checking one out and it nearly knocked me over!
This is one of my recipes that I modified since my current household has a very sick person who eats a mechanical soft or puree diet and he can't eat hot or spicy foods, I also added creamed corn to his casserole.
I de-constructed the ingredients to enchiladas and made 4 small, modified custom casseroles, 2 are mild, one is the regular recipe and a larger portion and the 4th one was for a guest who did not like hot food either.
I used very little Hatch Enchilada sauce in the small casseroles.
Here is a list of main ingredients, keep in mind I am an old school cook, and even though I collect old cookbooks, I don't particularly follow the measurements or even the ingredients, especially if I don't have, or don't like some of the ingredients, I leave them out or use something I already have.
I bought the small casserole dishes at the thrift store.
My ingredient list for today's casseroles:
- 80-20 ground beef, I used one lb.
- corn tortillas, I used about 2 on the small casseroles, and maybe 5 on the larger one.
- sour cream
- black olives
- diced green chilis
- 1 diced onion
- cheddar cheese, shredded
- Hatch Red Enchilada Sauce
- Diaz Farms mild green chili powder (you can use red.
- Refried beans
-dash of garlic powder
- salt and pepper to taste
- cumin if you like it
Next time I would add more enchilada sauce if I could find some mild.
350 for about 25 mins, I also would have baked it a bit longer.
