Easy Pea-sy Chicken Pot Pie

Hello everyone! I would like to share the recipe and steps to this easy and tasty Chicken Pot Pie. I think most of these ingredients you will already have in your fridge and pantry, if not, go get them...you will love to make this quick and easy homemade pot pie.

Ingredients such as chicken, broth, and potatoes you can use grocery store rotisserie or leftover chicken, canned broth, canned potatoes, peas, and carrots. In this recipe I used my 10" iron skillet, a deep pie dish or oven safe pan will work well. Also, another tasty pie variation, substitute your leftover Thanksgiving turkey for the chicken, you and your family will love it.

Ingredients:
1/2 cup butter
1/3 cup chopped onion
1/2 cup all-purpose flour ( and little extra for rolling dough)
1/2 tsp salt
1/4 tsp ground black pepper
1/4 tsp celery seed (error on video & this is an optional seasoning)
1-3/4 cups chicken broth (may need a little more if filling looks dry)
1/2 cup milk
2 cups chopped cooked chicken
1 cup frozen peas and carrots (optional 14.5 can of peas and carrots)
1 cup undercooked microwaved or boiled cubed potatoes (optional 15 ounces can whole new potatoes drained)
1 egg
1 package prepared double-crust pie pastry (optional Pillsbury is the best crust, my kids tell me)

Preheat oven 425 degrees F (220 degrees c)
Bake 30 minutes and let it cool 15-20 min,( Ha Ha Ha, if you can wait )for filling to thicken.
