Buddha's hand is a variety of lemons; Its full botanical name is Citrus medica var. Sarcodactylis, the variety is derived from the Greek words sarkos and dactylos meaning "fleshy finger". Those fingers, numbering from about 5 to more than 20, are carpels separated into fleshless segments. Sometimes they are held close together or closed, like a praying hand; other times, they're loosely arranged (think of a squid in jet mode) or spread apart, like a fat, relaxed octopus.

Like most other citruses, Buddha's hand is native to Asia. It is believed to have originated in India, before traveling west and east. Citrons are the oldest cultivated citrus fruits, possibly because their very thick skin helps them move well.

availability
These fruits ripen from November to early February, which is when they are sold at growers and in some grocery stores. The timing is perfect: Buddha's hand creates an auspicious New Year's gift.
