Mango and Sabudana Kheer is a delightful Indian dessert that combines the sweetness of ripe mangoes with the creamy texture of sabudana (tapioca pearls) and coconut milk. Here's how to make it using coconut milk powder:

Ingredients:
- 1 cup sabudana (tapioca pearls)
- 2 cups water
- 2 cups coconut milk (prepared from coconut milk powder)
- 1 cup ripe mango pulp
- 1/2 cup sugar (adjust to taste)
- Sliced almonds and pistachios for garnish
- Fresh mango slices for garnish (optional)

Instructions:
1. Rinse the sabudana under cold water until the water runs clear. Soak the sabudana in 2 cups of water overnight.

2. In a saucepan, heat water and add coconut milk powder over medium heat. Stir in and let it simmer for about 10-15 minutes, stirring occasionally, until the mixture thickens slightly.

3. Add sugar to the saucepan. Stir well to combine and let it simmer for another 5-7 minutes, until the sugar dissolves and the flavors meld together.

4. Boil the sabudana and wash it in cold water till it gets transparent.

5. Once the coconut milk reaches your desired consistency and sweetness, remove it from the heat and let it cool to room temperature.

6. Transfer the kheer to serving bowls , while adding mango purée and sabudana to it. Garnish with sliced almonds, pistachios, and fresh mango slices if desired.

7. Chill the kheer in the refrigerator for at least an hour before serving to enhance the flavors.
