This is very refreshing and super cheap! Add this to your summer drink rotation. A splash of coconut rum would make this extra special.
You need:
The skins from 3 pineapples. (not the green crown)
1 1/3 cup sugar of choice - I use unrefined cane sugar
4 ounce jar of Kendra's Kreations fruit jelly (I used Prickly Pear Jelly) (or use 1/3 cup more sugar)
5 quarts (20 cups) of water
Other optional mix-in ideas: ginger, lemon, lime, turmeric, hibiscus, cinnamon, cardamom, cloves, or all spice.
I was inspired by Spoon Fork Heart. Here is a link to her version: • Pineapple Skin Drink เปลือกสับปะรดมีป...

Hi, I'm Kendra! I have lived most of my life in Texas. I enjoy cooking & preserving food by canning. I love canning so much I started a small canning business in 2011 devoted to jams & pickles. I volunteer as the social media manager for our family cemetery and the family's yearly reunion. I also volunteer for the State Fair of Texas as a judge in the Creative Arts Division for Canned Goods. When I'm not doing any of those things we're camping. We LOVE camping and traveling.
