Masala Khichdi

Ingredients
Ghee - 2 tbsp
Oil - 2 tsp
Cumin seeds - 1 tsp
Mustard seeds - 1 tsp
Curry Leaves - 10-12
Asafoetida - 1/2 tsp
Cloves - 2-3
Cinnamon Stick - 1 inch piece
Onion - 1 big ( diced)
Ginger Garlic paste - 1 tbsp
Tomato - 1 big (diced)
Green chilled - 2
Salt to taste
Potato - 1 big (diced)
Green Peas - 1/2 cup
Turmeric pd - 1 tsp
Red Chilli pd - 1 tsp
Coriander pd - 2 tsp
Green Moong Dal - 1 cup (soaked for 30 min)
Rice - 1 cup (soaked for 30 min)
Water - 6 cups

Tadka
Ghee - 1 tbsp
Cumin Seeds - 1 tsp
Mustard Seeds - 1 tsp
Garlic Cloves - 5-6 (roughly chopped)
Dry Red chilli (round) - 3
Asafoetida - 1 tsp
Red Chilli Pd - 1 tsp

Fresh Coriander Leaves For Garnish

Method
-Heat ghee & oil in a pressure cooker.
-Once hot, add cumin seeds, mustard seeds & curry leaves. Allow them to crackle.
-Add hing & give it a nice mix. Followed by cloves & cinnamon. Roast a little till fragrant l.
-Now add the onions and sauté a little.
-Add ginger garlic paste & cook till the raw smell goes away.
-Now add tomatoes & green chillies. Season with a little salt at this stage.
-Now in goes veggies. And again season with salt, turmeric pd, red chilli pd & coriander pd.
-Now in goes the green moong dal, rice. season with salt. Give a mix. & Add three times the water.
-Let it get 4 whistles.
-Once the pressure releases, serve hot with a tadka.
-In a tadka pan, add ghee, cumin seeds, and mustard seeds. Let it crackle,now add garlic, whole red chillies, hing & red chilli powder.
-Garnish with freshly chopped coriander leaves.
