The Diplomat Cake recipe has its origins in France, coming from the classic recipe of Charlotte Russe (Russian charlotte) with biscuits and fine bavarois vanilla cream (without flour or starch) whipped with natural whipped cream.
Candied orange peels and raisins (or dried cranberries) drunk with orange liqueur or real rum are NOT missing from the Creme Diplomat! I will show you how to properly incorporate the gelatin and whipped cream into the Diplomat cream, how to assemble the layers of the cake and how to decorate in a classic or modern style. Fruits can be fresh, frozen or from compote and can be chosen according to preference or season. It is good to know that certain fresh exotic fruits (kiwi, mango, pineapple or papaya) contain an enzyme that destroys the gelatin, resulting in a fluid cream! We will not encounter problems if we use compotes from these fruits!
