In today's episode we have come to the home of a super talented Kashmiri Pandit home chef Rajni Jinsi ji to get a slice of the lesser known Kashmiri Pandit cuisine. A native of Kashmir, Rajni ji was always passionate about cooking and hence she started with catering to the demands of friends and family. As people loved her food and her popularity surpassed and she went on to host special food festivals and pop up in different parts of the country. Currently she is operating a Kashmiri Pandit home kitchen service in Delhi NCR titled Hangul.

In this meeting she treated us to four of her popular dishes-dum aalu, rogan Josh, naini pulao and mooli raita. From the simple yet robust flavours we concluded the following attributes of the Kashmiri Pandit cuisine. It is devoid of onion, garlic and even tomatoes. The predominant ingredients are aromatic spices, hing and yogurt.
