For 2 persons :

-2 TBSP curry paste (of your choice, I used boemboe)
-mix with 1 TBSP of natural oil
-Put 200-300 grams of cooked rice and mix all together

Bake the rice in a preheated oven at 200 degrees celcius for about 20-30 min (or untill cripsy, some ovens rock a bit faster or slower).
Stir occasionally!!

For the dressing :
-3 cloves garlic finely chopped
-1 chilli finely chopped
-2 TBSP soya sauce
-2 TBSP of sugar
-half a lime/lemon
-splash of water
dressing done !

-1 handfull finely chopped mint & coriander
-1 cucumber diced
-1 handfull chopped peanuts

Put the cucumber on a plate, followed by the fresh herbs and crispy rice.
Add the sauce and serve with some peanuts.
