Fish fingers were a childhood staple for me, and probably the only way we had fish at home, unless it had come from the chip shop. Clarence Birdseye didn't invent them, but he did make them massively popular from the 1950s onwards. In this video I try to make neat rectangular fish sticks like you'd get in a shop. I also use meat glue (transglutimanase) to bond some skinny fish fillets into a thicker piece. And I make some quick and easy tartare sauce. And I make my own breadcrumbs.
