This is not your Mama's Meatloaf... or maybe it is and she already got this recipe from my blog, lol! All jokes aside, this is one of my favorite meal prep recipes. I like to do this on my smoker outside, but it is just as delicious in the oven. We stuff this baby with cheese and glaze it with a delicious sauce. Check it out!

Ingredients: (Grocery List)
2 lbs 80/20 or 85/15 Ground Beef
1/2 large onion
1 tbs garlic (optional)
1 jalapeno
1/2 large red pepper
2 oz sharp cheddar
2 cups bread crumbs (as needed)
1 tbs Worchestershire
2 eggs
1/2 cup bbq sauce
1/4 cup ketchup
2 tbs Italian seasoning
salt, pepper, mccormicks hamburger seasoning

Directions:
Preheat grill or oven to 350 & prep your veggies.

Cook veggies and garlic - then set aside in the fridge to cool. Combine ground beef and season with Italian seasoning, salt, pepper. Add veggie mixture and Worchestershire sauce. Begin to mix everything together and add bread crumbs gradually. Add in 1 whisked egg and more bread crumbs until the meatloaf takes form and has proper consistency. Put in the fridge for 20 minutes to firm up.

Form mixture into a loaf shape. Dig a trench in the middle and add your cheese - then close it up tightly. (You can place this back in the fridge again for a bit to ensure it holds together better) Season outside with mccormicks hamburger seasoning. Bake or smoke at 350 until it reaches 165 internal temp (about 1 hour). Baste with your favorite (warmed) bbq sauce about half way through. Let rest 20-30 minutes before slicing.
