The onion pie is a traditional recipe from Bari and reminds me of my grandmother, all grandmothers in Bari can do the onlion pie, which is different from family to family. This is the recipe of onion pie of my family from Bari, but there are really many versions of it even if similar. This remains however the original recipe from Apulia. In my family for instance we prefer not to use anchovies and we have always used the bacon that binds a lot with eggs, tomato and fragrant Apulian onions. If you really want a more typical onion pie, you add to our ingredients the legendary ricotta squand (ricotta forte), a very creamy and spicy ricotta typical of Bari. You will be amazed at the shape of our Pugliese calzone that looks like a pie because what in the rest of Italy is called calzone, in Bari are fried or baked panzerotti. You can use the same recipe but with different filling, we also do it in Bari with minced meat, mozzarella and tomato, turnips or as my grandmother did, with ricotta and sugar.
