Meet the Pallone di Gravina, a rare cheese made in a small part of Puglia, Italy, called Alta Murgia. It has the shape of a perfect ball, and that’s actually what its name translates into in Italian. But its shape is not the only special feature this cheese has. Pallone is made with raw milk, which makes it very challenging to make. So much so that there are only four producers in the area (and in the world!) who make this cheese. I visited one of them, Caseificio Stella Dicecca, in Altamura, Puglia, Italy to see how the Pallone is made.
