Peanut Butter Cornflake Balls / VEGAN + Gluten-Free!

A healthy-ish take on a classic! Peanut butter cornflake balls made with date paste instead of corn syrup! I halved the recipe for this video, however I think this made the perfect portion! Keep in the freezer and pull one out whenever - they don't freeze solid!

Recipe:
3 cups gluten free vegan cornflakes(unsweetened or low in sugar)
1/2 cup natural peanut butter
1/2 cup brown sugar
1/2 cup date paste(1/2 cup water + 1/2 cup pitted dates blended)
1/2 tsp vanilla extract
pinch salt

Cook date paste and sugar over med heat until bubbly and all sugar has dissolved, add peanut butter, salt and vanilla. Stir together very well and pour over cornflakes, form into balls and place on parchment. Freeze minimum 15 mins, or store in freezer! Enjoy!
