Today I baked some delicious custard and peach cookies.
2 egg yolks or 1 egg.
Sugar (50 g / 2 tbsp.)
Vanilla infusion (1 tsp)
Corn starch (25 / 1 tbsp).
Milk (300 ml / 1 + 1/5 cups).
Cook over medium heat until thickened, about 1 minute after boiling.

Place in refrigerator until cool.
Soft butter (180 g / 6.3 oz).
Powdered sugar (100 g / 3.5 oz).
Zest of 1 lemon.
1 egg.
Flour (300 g / 10.5 oz).
Baking powder (1 tsp).
Knead the dough.
Divide the dough into 2 parts (in the ratio of 2/5 and 3/5). Place a smaller portion of the dough in the freezer until hardened.
Roll out the second part of the dough to a thickness of 5 mm / 0.2".
Diameter 5-6 cm / 2-2.5".
2 slices of canned peach.
For convenience, transfer the custard into a pastry bag.
Fill the cakes as in the video.
Grate the frozen dough and place on top.
Bake in a well-heated oven at 180Β°C (356 F) ~ 20 minutes. Baking time depends on the features of your oven.
