Sometimes despite having all the vegetables at home, we crave to make something new. Then do try this amazing dahi tadka recipe.
Dahi tadka is a very traditional recipe known with different names inn different parts of the country. In Himachal Pradesh dahi tadka it is known as Redu. In Rajasthan it is known as dahi ki sabji.
Today, I have shared with you the Rajasthani Dahi Tadka Recipe. And to make the Rajasthani experience complete, I have also shared with you how to make Khoba Roti.
Khoba Roti is a highly flavourful roti that is beautifully designed too.

Dahi Tadka
Preparation Time: 5 minutes
Cooking Time: 15 minutes
Serves: 3-4

Ingredients:
2 cup Yogurt
3 medium onions, sliced
2 Tsp ginger garlic paste
1 tsp chopped green chillies
½ tbsp chopped garlic
½ tsp mustard seeds
½ tsp cumin seeds
1 tsp cumin powder
1 tsp turmeric powder
1 tsp red chili powder
3 tbsp mustard oil
Salt to taste

Method:
Whisk the yoghurt well till smooth & lump free.
Heat oil in a pan, add cumin seeds and mustard seeds and fry till it splutters.
Add the green chilies, followed by the ginger garlic paste and then the sliced onion and saute till the onions are lightly golden.
Now add the powdered spices and then the yogurt and mix it well cook for more few minutes stirring continuously.
Remove from heat and add chopped coriander leaves.
Seve hot with khoba roti.

Khoba Roti
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 3

Ingredients
1 ½ cup whole wheat flour
1/4 cup semolina
1 tablespoon chopped garlic
1 tablespoon kasuri methi
Salt to taste
2 tbsp melted ghee plus more for drizzle
Method:
In a mixing bowl, combine the flour, garlic, salt, Kasuri methi, and 2 tablespoon of ghee. Rub the flour between fingers to mix well. Make sure all the flour is coated well with the ghee.
Add water to knead a stiff dough. Rest the dough for 10 minutes.
Divide the dough into 3 equal sized balls.
Dust the work surface with some dry flour, and roll the dough into a 1/2” thick circle.
Dock the roti with a knife.
Heat a pan over low heat, place the roti and cook for a few seconds on each side.
Remove from the pan and pinch the roti all over the surface to make a design over it.
Return the roti with design side up and cook over low heat. When one side is cooked and light golden brown, carefully turn the roti over and cook on the other side.
Drizzle with melted ghee.
Serve hot with Dahi Tadka.
