Sweet Potato Salad

2 pounds sweet potatoes, peeled and cubed
1/4 teaspoon salt, divided
1 cup Miracle Whip
Zest of 1 orange
1/3 cup orange juice
1 Tablespoon honey
1/4 teaspoon ground ginger
1/8 teaspoon ground nutmeg
1 cup sliced celery
1/4 cup dried apricot pieces
1/2 cup chopped pecans
1/2 cup canned pineapple tidbits, drained

In a large saucepan combine sweet potatoes, 1/8 teaspoons of salt, and enough water to cover the potatoes. Bring to a boil, then reduce heat. cover, and gently boil for 12 to 15 minutes or just until potatoes are knife tender. Drain well and cool.

Make the dressing by combining the Miracle Whip, the zest of the orange, the orange juice, honey, ginger, and nutmeg. Stir in celery, and apricots.

Add the cooked and cooled sweet potatoes. Gently fold together in the dressing mixture.

Cover and chill for a few hours. Prior to serving, stir in the nuts and pineapple. 

Yield: 8 servings
