Chocolate can be finicky. When melting chocolate to dip cake pops, you can melt it in the microwave, or melt your chocolate in heated water bath or bain marie. It simply means that you heat a little bit of water in a heavy bottom pan and put a secondary pan over top of that with the item that you wish to heat slowly. In this case, I am melting chocolate for the purpose of dipping cake pops and am looking for a specific consistency.

When working with chocolate, you should always have a good thermometer around. I love that this one is magnetic and I can attach it to the side of my stove for convenience!
