My Complete Traditional Yemeni Lunch or Dinner Feast Recipes 😍

Let’s dive into preparing a delicious Yemeni feast, starting with the meat stew.

Meat Stew
In a pot, sauté (250 grams) of chopped onion without oil.
Add your choice of lamb, mutton, or beef. I’m using mutton here.
Season with:
One tsp each of black pepper, cumin, paprika
Half a tsp turmeric
One tsp salt or to taste
Stir in one tbsp chopped garlic (about 15 grams).
Cover the pot and let it simmer on medium heat for 5 minutes.
Stir occasionally until most of the water evaporates.
Add 2 diced tomatoes (about 250 grams) and one tbsp Yemeni roasted onion powder.
Cook until the tomatoes dissolve, then cover the meat with hot water.
Simmer until the meat is cooked and tender, about one hour or more depending on the meat.

Bulgur Preparation
In a separate pot, add half cup of washed coarse wheat (bulgur).
Cover the bulgur with 3 cups of water.
Cook on medium heat for 20 minutes, then remove from heat and set aside.

Yemeni Fenugreek Mix (Hilba)
In a bowl, add one cup of water and one tbsp Yemeni fenugreek mix (about 15 grams).
Let it soak for 20 minutes.

Yemeni Sahawiq Salsa
Using a mortar and pestle (or food processor), blend:
Garlic and hot peppers (optional amount)
Salt to taste
Two tomatoes
One fourth of a bunch of coriander
Crush until smooth, then stir in half a tsp cumin powder.
Set aside for later.

Whipping Fenugreek
Drain the water from the soaked fenugreek.
Whip the fenugreek for 10 minutes until it becomes creamy and frothy.
Add half a lemon’s juice and one tbsp of the sahawiq salsa.
Season with salt and mix. Set aside.

Thickening the Meat Stew
Check the meat stew. It should be tender by now.
Scoop some broth into a bowl and let it cool.
Add half a tsp white or whole wheat flour to the broth and mix.
Pour this mixture into the stew to thicken the broth. Let it boil.

Yemeni Aseed
Place the pot of cooked bulgur back over medium heat.
Add:
Half a cup yogurt (about 120 grams)
Two cups of water
One tsp salt
Stir and bring to a boil.
Gradually add flour, stirring constantly.
Add a little hot water as needed and let it simmer for 3 minutes.
Stir until the water is absorbed. Add more hot water and let it simmer for 2 more minutes.
Transfer to a serving bowl and shape the surface into a cone with a pond in the middle for the broth.

Yemeni Fahsa
In a clay bowl over medium heat, add chopped garlic and bell peppers (optional amount).
Shred some of the meat from the stew and add it.
Stir in one tbsp sahawiq salsa and some broth.
Add half a tbsp whipped fenugreek and a little more sahawiq on top.
Serve!
