Summer is almost here, which means it's almost time for an abundance of Zucchini! For this week's Bite we're bringing it back to the end of last summer with a re-run of our Zucchini Bread for Miss Molly Recipe!

If you do any home gardening, you are well aware of the zucchini invasion that comes at the end of summer. It's everywhere, and it just won't stop growing. Zucchini bread is one of the solutions to an overabundance of this vegetable. It's a quick-bread that does not involve yeast, but rather is leavened with baking soda and a touch of baking powder.

The traditional recipe is loaded with sugar and oil. Chef John sent one to his cousin-in-law in Ireland, Annie Gilligan Browne, who wanted to make a loaf for her daughter, Molly. She was startled by the amount of sugar, and it made Chef John take another look at the recipe. So he played around with it and came up with a healthier, and we think tastier, version of the classic loaf.

Makes 2 loaves

Ingredients:

3 eggs
3/4 cup granulated sugar
1/2 cup vegetable oil
2 cups firmly packed grated zucchini (do not peel)
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon double-acting baking powder
1 tablespoon ground cinnamon
1 cup coarsely chopped walnuts or pecans
1/4 cup raisins

Directions:

1. Preheat the oven to 350* F
2. In a bowl, beat the eggs until light and foamy. Add the sugar, oil, zucchini, and vanilla and mix lightly but well. In another bowl, combine the flours, salt, soda, baking powder, and cinnamon and add to the egg-zucchini mixture. Stir until well blended, but do not overmix. Fold in the nuts and raisins, and pour the batter into two 8 x 4 x 21⁄2 inch greased loaf pans.
3. Bake in a preheated oven for 1hour. Cool on a rack.
