INGREDIENTS
1. Red and white turnip (you could use any colour of turnip)
2. A sprig of thyme (optional)
3. A sprig of rosemary (optional)
4. 2 cups of Water
5. 1 tablespoon of sea salt

INSTRUCTIONS
1. Rinse turnips to get rid of dirt
2. Cut radish into thin slices ensuring the slices are similar in sizes
3. Prepare the brine by adding sea salt with water.
4. Transfer the turnips into jar. Push the radish slices down so that the jar is tightly packed
5. Add brine until turnips are fully submerged in water
6. Add weights to further keep radish slices submerged.
7. Seal the jar tightly and leave to ferment for 2 weeks
8. Once jar is opened, transfer to refrigerator
***fermented radish can last for up to 6 months if stored in a cool dark place
****remember to always wash your hands and utensils before making any fermented food
