20-minute yukgaejang (Spicy beef soup) (4 servings)

[Ingredients]

2 cups (180g) beef (bulgogi meat)
2 eggs
2 cups (120g) soaked glass noodles
2&1/3 stalks (228g) green onion
2 cups (80g) oyster mushroom
2 cups (60g) shiitake mushroom
4 cups (280g) mung bean sprouts
Minced ginger
1&1/2 tbsp (30g) minced garlic
3 tbsp (24g) coarse red pepper powder
1/3 cup (60ml) soup soy sauce
1/3 tbsp (4g) fine salt
Black pepper
6 tbsp (42g) sesame oil
2 tbsp (14g) cooking oil
6 cups (1,080ml) water

[Directions]

1. Soak the glass noodles in lukewarm water for 30 minutes.
2. Slice two stalks of green onion in half lengthwise and cut them 5-cm long.
Chop one-third of a stalk 0.3-cm thick.
3. Cut the beef into a bite-size.
4. Remove the stem of the shiitake mushroom and slice it 0.4-cm thick.
Finely shred the oyster mushroom.
5. Beat the eggs.
6. Pour the sesame oil and cooking oil in a pot
and stir-fry the long green onion pieces over high heat.
7. When the green onion softens halfway, add the beef
and fry until the blood disappears.
8. After adding the coarse red pepper powder
and frying until the oil is infused with the red pepper, add water.
Tip. Scrape the meat stuck on the bottom of the pan with a spatula
to prevent it from burning.
9. Add the shiitake mushroom, oyster mushroom, minced garlic,
minced ginger, and soup soy sauce, and boil over high heat.
10. Add mung bean sprouts when the soup starts boiling.
When it boils up, taste it and season to taste with fine salt.
Tip. Add beef dasida or Miwon if desired.
11. Add the soaked glass noodles, and when the soup comes to a boil,
add the beaten eggs.
Tip. Do not stir after adding the beaten eggs.
12. When the eggs are cooked, put the yukgaejang in a bowl and finish
by topping with black pepper and green onion chopped for garnish.
