Sauced and No Sauce Spare Ribs

Prep Time: 15 mins
Cook Time: 6 hours
Cook Temp: 275F

Ingredients:
Spare Ribs
Mesquite wood chunks (use your favorite wood)
Favorite seasoning
Brown sugar
TIger sauce
Butter

Prep Directions:
1. Preheat smoker/grill to 275F
2. Cover ribs with rub

Cooking Directions:
1. Place ribs on smoker/grill
2. Grill for 60 minutes, then check to see if it needs to be spritzed
3. Grill in 30 minute increments, then check to see if it needs to be spritzed
4. Remove ribs after 3 hous
5. Wrap ribs in aluminum foil with butter, tiger sauce, rub and brown sugar
6. Place back in the smoker/grill for 2 hours
7. After 2 hours, remove from aluminum foil and place back in smoker until desired tenderness
8. Sauce ribs 15-30 mins before removing from smoker/grill
9. Remove from smoker/grill, let rest for 15 mins and enjoy!
