Time to tackle a smoked chicken recipe! In this video, I'll show you how to prepare a spatchcock bbq chicken, and I'll go ahead and break it into rib-less chicken halves as well. We'll also clean and cook some smoked chicken thighs and smoke some BBQ breakfast sausage. By employing a braise on the products, I show how to smoke chicken with bite-through skin in this bbq chicken recipe--chicken skin can often turn out tough and leathery.
