In this fire management series video, we smoke sausage on the Workhorse 1957 using a Fat Daddy Smokers Charcoal Basket. Typically, you build a live wood fire in the Workhorse Pit on the bottom of the fire box. However, if you want to use charcoal in your workhorse, the ash accumulates and shuts off the air flow to the charcoal. By using charcoal basket, you create an air gap for the air to flow up through the bottom of the charcoal thus allowing it to burn more efficiently and not be extinguished by the accumulating ash. This video experiments with a charcoal basket while cold smoking sausage.
