Many people I have spoken to in South Florida who fish with a line or are not familiar with a larger variety of fish would never eat Almaco Jack. I hope by putting this video out there I can convince one more person to try this delicious fish and make fishing more sustainable by increasing the variety of fish eaten.

I had already finished gutting my fish; if you don't know how-to, it's pretty simple. You take your knife and do a cut in the belly region from the hole to the bottom of the wings. At this point, you can remove all the guts with your hand, and you're all set. If your fish is whole and you haven't continued to separate the head for soup or the wings for the pan, you can also filet the entire body very similar to how I did it. I do like to remind people that there are many ways to clean and prepare a fish; this is how I usually do it.
