Humuhumunukunukuapua'a

2 oz Gin
.75 oz Pineapple Juice
.75 oz Lemon Juice
.5 Homemade Orgeat
Peychaud Float

Singapore Sling

.5 oz fresh lemon juice
1 oz Sherry Infused with Cherry
1 oz Old Tom Gin, Bar Hill
1 oz Soda Water

Shake gin, cherry brandy, and lemon juice with ice cubes. Stir in soda. Pour unstrained into a tall glass, if necessary adding more ice to fill. Garnish with a mint sprig.

Don The Beachcomber’s version, circa 1937. Donn Beach visited the Long Bar of the Raffles Hotel in the late 1920s, so his Singapore Sling could be an indication of what Raffles was slinging at the time. On the other hand, it could just be cribbed from Harry Craddock’s 1930 “Savoy Cocktail Book”. Craddock’s Singapore Sling calls for 1 ounce dry gin and ½ ounce each lemon juice and cherry brandy, topped with soda.

The Double Donn

2 oz Dr. Cush's Tiki Gin (gin flash infused with allspice and cinnamon)
.75 oz Coconut Milk
.75 oz Pineapple Gomme syrup
.75 oz Egg white (one egg white)
.5 oz Lemon juice
1 Dash tiki bitters
2 Dashes of Orange Flower Water
2 oz Passion fruit soda water (la croix)
Mint island garnish

Pineapple frond

Named after Don Blanding's book of poetry. He was the poet laureate of Hawaii and grew up in the south. It's a tiki gin Ramos fizz.
