Nelson Mandela once said, “It always seems impossible until it’s done.” These past few weeks were filled with the most unforgettable, remarkable yet arduous experiences that will be impossible to forget. The biggest takeaway we had from this experience followed the saying, "How do you eat an elephant-one bite at a time." Once we got started each day, we seriously got lost in it all.
