Recipe:
1 gallon of whole milk(raw or pasteurized)
1-1/4 cups water
1-1/2 teaspoons citric acid
1/2 teaspoon liquid rennet
1-2 tablespoons plais salt
Dissolve the citric acid in one cup of water and mix with the milk
Heat the mixture to 90°F and remove from the heat
Mix 1/4 teaspoon liquid rennet with 1/4 cup of water and stir into the warm milk for 30 seconds
Cover and let stand for 5 minutes
Slice the curd with a long knife into 1" x 1" squares
Reheat to 105°F stirring very gently as it heats
Remove the curd and press out some of the whey
Form the cheese into a ball and drop into hot whey for 20 second intervals until it is soft enough to stretch
Stretch and fold the cheese until it has a smooth and shiny appearance
Form into desired shape and rest it in room temperature whey for 20 minutes
Drop the cheese into very cold whey for 5 minutes to firm it up so it keeps it's shape
