How to cook a delicious sausage or become a separate meat dish for lunch or dinner. A long-forgotten recipe for an excellent, inexpensive meat dish that all meat lovers will love. Pork knuckle is much cheaper than bone-in pork ham, but dishes from it are no less tasty. Try this recipe for great results. Cook with love! You can do it!

Ingredients:
Knuckle of pork (approx. 1200 gr)
remove the bones
Cut the meat from the skin
Cut the meat into strips
Beat the meat lightly
For 1kg:
Salt 18 g 50/50 (9 g nitrite salt 0.6% and 9 g table salt)
Pour the remaining salt on the skin and rub it all over.
Place in the fridge for 12 hours
For 1kg:
Nutmeg - 1 g
Dried garlic - 2 g
Dry adjika - 1 tsp
Ice water - 100 ml
Place the skin on cling film.
Place meat on skin
Tie with a thread
Cook on low heat for 3 hours at 80 °C
Cool down in cold water
Place in the fridge for 12 hours.
Remove thread and foil
Look what a wonderful sausage you get!
