This Cuban holiday classic is much easier than most would assume. If you aren't going all out with a full pig, or caja china. This recipe is a great way to get some of those classic cuban flavors, without all of the work and space required to roast a full pig.

1:22 - Start prepping the meat
2:00 - Score the fat
2:25 - Insert garlic cloves
2:45 - Salt the meat
3:12 - Pour the mojo
3:50 - Add sazon (seasoning) to the bottom
4:22 - Wrap in plastic and refrigerate (if you have time)
4:50 - Prep for cooking - chop a yellow onion
5:19 - Roast at 325 for 5 hours
