Moist and Delicious Banana Bread
with cheesecake filling

Ingredients:

1 2/3 cup all purpose flour,
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup white sugar
1/2 cup brown sugar

1/2 cup butter, softened or melted

3 eggs, room temperature
1 teaspoon vanilla extract
1 1/2 cup mashed bananas or 3 medium
1/2 cup Greek yogurt, sourcream or milk


Cheesecake filling:
8oz cream cheese, softened
1/4 cup sugar
1 egg yolk
1 tsp vanilla extract


Note: Skip this part if you just want to make the
banana bread without the cheesecake filling;
it’s just as good.

Cheesecake filling:
In a bowl, beat the softened cream cheese, sugar and vanilla extract with an electric mixer until smooth and creamy. Add the egg yolk and continue to beat until well combined and smooth. Set aside.

Directions:
In a bowl, mash the bananas. Add melted butter and sugar, and combine until creamy. Add the eggs, Greek yogurt, and vanilla, then mix well. Sift together the flour, baking soda, and salt, then add these dry ingredients to the wet mixture and mix until well combined.

Pour half of the batter into a loaf pan, then spread the cheesecake filling over it. Cover with the remaining batter.

Bake in a pre-heated 350 degree Fahrenheit oven for 1 to 1 1/2 hours. Cool in the pan on a wired rack.

** Baking time varies depending on your oven. To check if it’s done, insert a toothpick into the baked item. If the toothpick comes out dry, it’s done. If it comes out wet, bake a little longer.
