KOOTTUKARI
INGREDIENTS
1.Bengal gram ½ cup
2.White cucumber (cubed small) 2 cups
3.Elephant foot yam (chena)(cubed small) 1 ½
4.Kerala nethran banana(small) 1 ½ cup
5.Chilli powder 1 tsp
6.Turmeric powder ½ tsp
7.Salt to taste

FOR MASALA
1.Grated coconut 1 ½ cup
2.Cumin seeds ½ tsp
3.Crushed pepper ½ tsp

SEASONING
1.Coconut oil 2 – 3 tbsp
2.Blackgram (urud dal) 2 tbsp
3.Red chilli 4 – 5
4.Mustard seeds ½ tsp
5.Cumin seeds ½ tsp
6.Curry leaves 2 – 3 twigs
GARNISH
1.Grated coconut 1 ½ cup
PREPARATION
1.Soak the bengalgram for 4 – 5 hours, pressure cook 20 mts adding
salt and water .Set aside.
2.Add all the vegetables (2 - 10) to the boiled dal, boil well together
till done well.
3.Fry the masala ingredients till red, grind coarsely, add to the boiled
mix boil well, set aside.
4.Season with the ingredients, (items 13 - 18) add the remaining grated
coconut fry till golden brown and add.
