Brazo de Mercedes Recipe and Tips

Ingredients:

topping -

confectionery sugar - 1 to 2 tablespoon

meringue -

egg whites - 8 (large)
cream of tartar - 1/2 teaspoon
sugar - 1/3 cup

➡️beat in low to medium speed NOT high
➡️beat until stiff peaks form or no longer slide
when the mixing bowl tilted

filling -

egg yolks - 8 (large)
condensed milk - 1 can (14 oz)
lemon juice - 1 teaspoon - to cut the richness
vanilla extract - 1 teaspoon

➡️combine all the filling ingredients in a
cooking pan before cooking
➡️cook in medium low heat


pan -

cooking oil - 1 teaspoon to grease
15" x 10.03 x .07 - pan size
parchment paper

bake at 350 F for 15 to 18 minutes
➡️ do not over bake
➡️ after baking.. leave the meringue in the
oven for 5 minutes to slowly cool..
(oven turned OFF and leave it open)
this is to from prevent cracking

to refrigerate
➡️place in a container with lid or a cake box
