400 g salad potatoes (waxy potatoes)
1 red onion

4 tbsp vinegar
75 g butter (for the brown nut butter)
1 tbsp coarse mustard
1 tsp caraway seeds
Salt
Sugar
Pepper
Ingredients for the Wiener Schnitzel:

4 veal schnitzels (e.g., topside)
4 eggs
Good breadcrumbs
Flour
Salt
Instructions:

Prepare the potato salad: Cook the salad potatoes, peel them, and slice them. Finely chop the red onion. Pour the hot beef broth over the potato slices and season with vinegar, brown nut butter, coarse mustard, caraway seeds, salt, sugar, and pepper.
Prepare the Wiener Schnitzel: Pound the veal schnitzels, salt them, and then coat them first in flour, then in beaten eggs, and finally in breadcrumbs. Fry in hot clarified butter until golden brown.
