My rainbow goodies playlist! :    • Rainbow Food!  

2 1/4 cups flour
1 1/2 tsp baking powder
1/2 tsp salt
4 tbsp butter
4 tbsp vegetable shortening
1/2 cup white sugar
1/2 cup brown sugar
2 eggs
1/2 buttermilk
2 tbsp milk
1 tsp baking soda
1 tsp white vinegar
1 tsp vanilla extract

Stir together flour, baking powder and salt, set aside.
Cream together butter, shortening and sugars.
Add in buttermilk, vanilla and eggs and blend. The mixture will look curdled.
*NOTE* if you don't have buttermilk, make your own by mixing 1/2 tbsp on vinegar or lemon juice with a 1/2 cup milk. Let sit at room temperature for 5 minutes before using. It will be lumpy looking).

In a small bowl mix together the 2 tbsp milk, baking soda and 1 tsp white vinegar. Set aside.

Add the flour mixture to the sugars/eggs/buttermilk mixture as well as the milk/baking soda/vinegar mixture.
Stir until just combined.

Divide batter into the number of colours you want.
Tint with food colour.
Pipe into circle shapes into a whoopie pie pan or on a greased cookie sheet.
Bake at 375 F, until cakes are set and spring back lightly when touched, about 5-6 minutes.
Allow to cool for 5 minutes in pan and transfer to wire rack to cool completely.

Fill with filling (recipe below)


Filling:
8 oz cream cheese at room temperature
2 tbsp milk
2 tsp vanilla
5-6 cup powdered sugar

Blend cream cheese with milk, vanilla and 3 cups of icing sugar.
Add more powdered sugar until desired texture is reached.

Store filled whoopie pies in the refrigerator.

They solve the problem I had with colour proportions by adding all colours at once in a bowl. I think mine are prettier ;)
