Super talented chef Olivia Burt shares her delicious and simple recipe to make kimchi at home!
You'll need:
- 1 Chinese cabbage
- 3-4 garlic cloves, crushed
- 3-4cm piece ginger, julienne cut or grated
- 1 tbsp fish sauce (optional)
- 3 tbsp kosher salt
- 2 tbsp Gochujang chilli sauce or chilli paste (see below)
- 1-2 tbsp golden/brown caster sugar
- 3 tbsp rice vinegar
- 8 radishes, coarsely grated (optional)
- 3 carrots, cut into matchsticks or julienne
