Apparently you can either not go up to fight him, and he'll teleport into the ground and you find him a bit later through a fog gate (and he has a sweet ass cutscene). I'm not exactly the most well-prepared for it, but I think I did okay. I did forget to equip my Estus flask for a quick drink, that may have made the battle just a bit shorter.
