[INDONESIAN]
Resep Otak-otak Bakar (30-35 pcs)

Bahan:
500 gr ikan tenggiri (murni daging)
2 ½ sdt garam
2 sdt kaldu jamur
1 sdm gula pasir
⅓ sdt merica
1 ½ sdt baking [powder

Bahan lainnya:
120 ml santan instan
130 ml air es
2 butir putih telur
120 gr tepung sagu / tapioka
1 ½ sdm tepung terigu protein sedang
2 siung bawang putih
5 butir bawang merah
1-2 batang daun bawang
1 batang seledri
Daun pisang untuk membungkus
Tusuk gigi / sate, potong kecil

Bahan sambal tauco:
4 buah cabai merah
3 siung bawang putih
3 buah cabai rawit
3 sdm tauco
1 ½ sdm gula pasir
1 sdt cuka
150 ml air

Bahan sambal kacang:
80 gr kacang tanah
3 buah cabai merah
1 sdm gula merah
1 sdt garam
200 ml air

Langkah:
1. Untuk sambal tauco, potong cabai merah, bawang putih, dan cabai rawit merah kemudian goreng cabai merah hingga setengah matang
2. Masukkan cabai rawit merah dan bawang putih, goreng hingga matang lalu masukkan ke dalam blender tahan panas. Tambahkan air, tauco, cuka, dan gula pasir, blender hingga halus
3. Pindahkan ke dalam wajan, masak sesaat lalu sisihkan
4. Untuk sambal kacang, goreng kacang hingga setengah matang kemudian masukkan cabai merah, goreng hingga matang
5. Masukkan ke dalam blender beserta air, garam, dan gula merah, blender hingga halus lalu masak kembali beberapa saat, sisihkan
6. Di dalam food processor campurkan tenggiri dengan garam, gula pasir, kaldu jamur, merica, dan baking powder, blender hingga lengket
7. Cincang bawang putih, bawang merah, daun bawang, dan seledri lalu masukkan ke dalam food processor
8. Masukkan santan dan putih telur, haluskan lalu pindahkan ke dalam mangkuk
9. Masukkan tepung terigu dan tepung sagu, aduk rata lalu tambahkan air, aduk rata
10. Siapkan daun pisang dengan lebar 14-15 cm, masukkan sedikit adonan, gulung lalu sematkan tusukan
11. Panaskan wajan / panggangan batu kemudian bakar otak-otak di api sedang kecil hingga matang
12. Otak-otak siap disajikan

Otak-otak Bakar Recipe (yield 30-35 pcs)

Ingredients:
500 g Spanish Mackerel (100% pure fish)
2.5 tsp salt
2 tsp mushroom powder
1 tbsp sugar
⅓ tsp pepper
1.5 tsp baking [powder

Others:
120 ml instant coconut milk
130 ml cold water
2 pc egg whites
120 g sago / tapioca flour
1.5 tbsp all-purpose flour
2 clove garlic
5 pc shallot
1-2 pc green onion
1 pc celery
Banana leaf to wrap
Toothpick/skewer, cut into small pieces


Tauco Sambal ingredients:
4 pc red chili
3 clove garlic
3 pc Thai chili
3 tbsp fermented bean
1.5 tbsp sugar
1 tsp vinegar
150 ml water

Peanut Sambal ingredients:
80 g peanut
3 pc red chili
1 tbsp palm sugar
1 tsp salt
200 ml water

Steps:
1. For Tauco Sambal, slice red chili, garlic, and red Thai chili. Fry red chili until half-cooked.
2. Fry the red Thai chili and garlic until cooked, then add all ingredients into a heat-proof blender. Add water, fermented beans, vinegar, and sugar. Blend until smooth.
3. Transfer into a pan. Cook shortly, then set aside.
4. For the Peanut Sambal, fry the peanuts until half-cooked. Then, add red chili and fry until cooked.
5. Transfer into a blender along with water, salt, and palm sugar. Blend until smooth, then cook again shortly. Set aside.
6. In a food processor, combine Spanish Mackerel, salt, sugar, mushroom powder, pepper, and baking powder. Blend until sticky.
7. Chop the garlic, shallots, green onions, and celery. Add into the food processor.
8. Add coconut milk and egg whites. Blend, then transfer to a bowl.
9. Add flour and sago flour. Stir, then add water. Mix well
10. Prepare banana leaves about 14-15 cm in width. Add a little bit of the dough. Roll, then secure with toothpicks.
11. Heat a pan or a stone grill. Grill the Otak-otak on medium-low heat until cooked.
12. Otak-otak is ready to serve.
