The Monggog/Mung beans is mainly cultivated in East and Southeast Asia and the subcontinent of India. These beans are one of the best source of plant based protein and other key nutrients.
Ingredients:
Cooking the Pork Hocks:
1-½ lb. pork hocks,
1 medium-sized onion, quartered
2 tbsp. fish sauce (patis) or salt
Water for soup
Other Ingredients:
1 cup Mung (Monggo) beans
1 medium-sized onion, chopped
4 cloves of garlic, minced
2 medium-sized tomatoes, chopped
1 thumb-sized ginger, sliced (not shown, optional)
1 tbsp. of fish sauce (add more if desired) or salt
6 jumbo sized shrimp, cut into smaller pieces (optional)
Spinach, moringa (malunggay), or other leafy vegetables
