Athirasa is a traditional sweet or snack recipe, which is usually prepared during festivals and Poojas as an oblation of god. Preparation of Athirasa is little tricky for 1-2 times. But once the correct tips, conditions followed and all the measurements & steps are proper, it is not a difficult task.
Athirasa is prepared by using mainly rice & jaggery. Additionally, grated copra, pepper cardamom, sesame seeds are added to enhance the taste. The rice powder should be homemade, shop bought rice powder is not at all suitable. The reason is, there must be a little moisture in the rice powder. That is the first condition in making Athirasa/ kajjaya. The next is, one must be very thorough regarding Jaggery syrup consistency. If consistency missed, Athirasa may fail. Athirasa batter/dough must be kept aside for minimum 8 hours before frying it. But maximumly it can be kept for 3-4 days. If you like crispy Athirasa, you can store it in an airtight container and if you want soft Athirasa, you have to store it openly, just by covering a plate or something. It tastes good in both way. Athirasa can be stored for around 15 days.

Raw rice 1cup
3/4 cup Jaggary
Dry coconut 1/2 cup
Seseme 2sp
Oil for deep fry
