🛒 Ingredients (4 people):

🔸 4 onions (800 g / 28.5 oz).
🔹 40 g unsalted butter (3 tbsp)
🔸 20 ml olive oil (1 ½ tbsp)
🔹 1,2 l stock (meat / chicken / vegetable) (you can use just water) (5 cups)
🔸 100 ml white wine (⅓ cup + 1 tsp)
🔹 15 g all-purpose flour (1 tbsp)
🔸 Salt
🔹 12 slices of 1 cm baguette (or the bread of your choice)
🔸 200 g gruyer cheese (you can use emmental, comtè...) (2 cups)

🍳 Directions:

1️⃣ Peel the onions, cut them in half and each into thin strips lengthwise.
2️⃣ In a medium saucepan, add the olive oil and butter. Heat over medium heat. When you see that the butter has melted, add the onion and a little salt. Cook, stirring often. After the first 5 minutes, cook over low heat until it is very poached and begins to brown (I like this point, you can brown it more if you prefer). It will take between 30-45 minutes.
3️⃣ Add the flour and cook for a couple of minutes. Pour the wine and, when the alcohol has evaporated, add the broth. Mix everything, cover and turn up the heat. When it starts to boil, turn it down and let it cook gently for about 20 minutes. Add salt if necessary.
4️⃣ Meanwhile, cut the bread into slices, brush both sides with a little olive oil and toast them in the oven at 180 ºC (350 ºF). Grate the cheese.
5️⃣ Serve the soup in bowls, place some slices of bread and cover generously with cheese (french people like it and so do we, but set the amount to your taste). Bring to gratin in the oven until the cheese melts and starts to brown.

👌 Note: the use of flour is optional, it serves to give a little more body to the broth.
