Abgoosht or Dizi is one of the most ancient & traditional dishes of Iran. Iranians cook it in special dishes such as earthenware or stoneware which then it is called Dizi Sangi. Abgoosht is a tasty, colourful & complete food. It’s tradition to prepare this dish while all the family are around and that’s why it is usually being prepared in Fridays lunch (Iranian weekend) so that all the family can gather at one place. They usually gather at the most senior of the family to have this dish.
First the juice is being separated from the the meat and fresh hot traditional bread pieces (Sangak Bread) will be soaked in the juice and served. Then the meat & the grains will be mashed and served with the same bread along with fresh herbs, homemade pickles & raw onion.
