Resep Nasi Ayam Mandhi (untuk 4-6 porsi)

Bumbu halus:
8- 10 siung bawang putih
½ buah bawang bombai ukuran sedang
1 jempol jahe
50 ml minyak

Bahan ayam:
1 ekor ayam utuh
3-4 sdm bumbu halus
2-3 sdm bumbu rendang instan
4 sdm plain yoghurt / santan
½ sdm garam
1 sdt penyedap / kaldu
½ sdt merica
1 sdm oregano

Bahan nasi:
375 gr beras lokal / 325 gr beras basmati
500 ml air kaldu tawar / air
4 sdm bumbu halus
2-3 sdm bumbu rendang instan
2 sdm margarin / ghee/ minyak samin
2 sdt kaldu ayam
1 buah kulit jeruk atau 3-5 lembar daun jeruk
3 lembar daun salam
1 sdt jinten bubuk, opsional
5-6 buah kapulaga, opsional
½ sdt garam
½ sdt merica

Sambal:
15 buah cabai rawit
3 siung bawang putih, iris
6 siung bawang merah, iris
Minyak
Garam
Penyedap

Pelengkap:
Timun, kupas dan iris
Cabai hijau besar
Bawang bombai, iris
Jeruk nipis, iris

Langkah:
1. Blender bumbu halus
2. Untuk nasi, tumis bumbu halus hingga matang
3. Kupas kulit jeruk hindari bagian dalam jeruk
4. Masukkan beras, bumbu halus yang sudah di tumis, bumbu rendang, jintan, kaldu ayam bubuk, kapulaga, daun salam, kulit jeruk, margarin, garam, merica, dan air kaldu.
5. Untuk ayam, belah menjadi dua bagian lalu marinasi ayam dengan semua bahan dan tambahkan oregano
6. Sayat ayam agar bumbu cepat meresap lalu tambahkan merica dan garam
7. Panggang ayam menggunakan Tefal Air Fryer Easy Fry EY-702 dengan suhu 180 derajat selama 15-20 menit
8. Setelah 20 menit keluarkan ayam lalu olesi dengan minyak goreng kemudian panggang kembali dengan suhu 160 derajat selama 8 menit
9. Untuk sambal tumis hingga matang tambahkan garam dan penyedap lalu tuang air dan masak hingga air menyusut
10. Untuk pelengkap, goreng cabai dengan sedikit minyak sampai sedikit kecokelatan
11. Sajikan nasi mandi dengan ayam turki, cabai, bawang bombai, jeruk nipis dan sambal sebagai pelengkap

Chicken Mandhi Recipe (yield: 4-6 servings)

Blended Spices:
10 clove garlic
½ pc onion
1 thumb ginger
50 ml oil

Chicken:
1 pc whole chicken
3-4 tbsp blended spices
3 tbsp Rendang instant seasoning
4 tbsp plain yoghurt / coconut milk
½ tbsp salt
1 tsp flavor enhancer / stock powder
½ tsp pepper
1 tbsp oregano

Rice:
375 g local rice / 325 g basmati rice
500 ml plain stock / water
4 tbsp blended spices
3 tbsp Rendang instant seasoning
2 tbsp margarine / ghee
2 tsp chicken powder
1 pc lime zest or 3-5 pc Kaffir lime leaf
3 pc bay leaf
1 tsp cumin powder, optional
5-6 pc cardamom, optional
¾ tsp salt
½ tsp pepper

Sambal:
15 pc bird’s eye chili
3 clove garlic, sliced
6 pc shallot, sliced
Oil
Salt
Flavor enhancer

Condiments:
Cucumber, peeled and sliced
Large green chili
Onion, sliced
Lime, sliced

Steps:
1. Blend the spices.
2. For the rice, sauté the blended spices.
3. Peel the lime zest, avoiding the inner part.
4. Add the rice, sautéd blended spices, Rendang seasoning, cumin, chicken powder, cardamom, bay leaves, lime zest, margarine, salt, pepper, and stock.
5. For the chicken, halve it and marinate with all the ingredients and oregano.
6. Slice the chicken so the marinate gets absorbed quickly. Season with salt and pepper.
7. Grill the chicken with Tefal Air Fryer Easy Fry EY-702 on 180°C for 15-20 minutes.
8. After 20 minutes, remove the chicken and brush with oil. Grill again at 160°C for 8 minutes.
9. For the Sambal, sauté the ingredients until cooked. Season with salt and flavor enhancer, then pour the water in and cook until it’s reduced.
10. For the condiments, grill the chili with a bit of oil until browned.
11. Serve Chicken Mandhi with chicken, chili, onion, lime, and Sambal on the side.
