Recipe:
WET INGREDIENTS
Beat 2 sticks of SOFT butter and 1/3 cup Allulose sugar for about 2 minutes, creating a deliciously creamy base.
Add a teaspoon of vanilla
Set aside.
DRY INGREDIENTS
1 cup of mildly chopped walnuts
1 cup of finely chopped walnuts
1 cup of flour ( I used a Keto wheat flour)
pinch of salt
The basic recipe is from "BEST RECIPE" from Cook's Illustrated Cookbook: the cooking gang that taught me to study recipes and pay attention to the details.

Mix the wet with the dry.
Roll a tablespoon of batter into a 3.5-inch log roll.
Bend it into a horseshoe shape and place it on the cookie sheet.
Bake at 325 degrees for 16 minutes, a precise timing that ensures a perfectly golden and crispy exterior, giving you the satisfaction of a well-baked cookie.
You can just rotate the pan front to back at the halfway point to ensure even baking.

I've always thought I was a morning person. Maybe that's what I used to be. Now, I am definitely a evening gal. Right after sunset, when it begins to get dark out, I feel nostalgic, grateful, and excited to spend the evening watching my favorite you tube series in my comfortable clothing.
It's pretty simple, but I love going to sleep each night. The soft pillows, blankets, emotions, clean skin and teeth, and forgetting every worry in the world. Even if I have a troubling dream, I attempt to rectify the complications/delays/struggles in my mind before I fully wake up. I try to process the events of the dream and retain the gold.
