Cheese and Chive Potato Scones! GLUTEN-FREE + VEGAN

Gluten Free Potato & Cheese Scones AND vegan of course! I've never made scones before and wow l'm obsessed, these are SO DELICIOUS 😍

Recipe:
1/2 cup 1:1 gluten free flour
1/2 cup all purpose gluten free flour
1/8 tsp ground nutmeg
1/2 tsp salt
1 tbsp vegan butter or olive oil
1/2 cup + 2 tbsp mashed potato(peeled + cooled)
1 1/2 tsp baking powder
1/4 cup vegan cheese shreds
1 tbsp green onion/ chives
1 tbsp cornstarch
1/2-3/4 cup very warm plant milk


1-Whisk together flours, nutmeg, and salt. Add vegan butter + mashed potatoes and mash in, or use a pastry cutter until crumbly.
2- Stir in baking powder, vegan cheese, onions and cornstarch
3- Slowly add plant milk 1/4 cup at a time, mixing with a fork until a dough comes together (I used about 1/2 cup) it should not be too sticky, but will hold in a ball without falling apart
4- Divide into 4 balls, shape into disks on parchment
5- Bake at 425ºf for 15-17 minutes, brush with vegan butter and broil for a few minutes after if you want a little crunch!
