PICKLED MURGH WRITTEN RECIPE :

Ingredients :
-Chicken 16 pcs 1 kg
-Chili powder 2 tsp + ½ tsp
-Turmeric 1 tsp
-Mustard seeds 1 tsp
-Fenugreek seeds 1 tsp
-Onion seeds 1 tsp
-Green chilies whole 8-10
-Ginger garlic 2 tbsp
-Dried mango powder 1 tbsp
-Oil ½ cup + 2 tbsp
-Lemon juice ¼ cup
-Salt 1 ½ tsp
-Allspice 1 tsp

METHOD :
Crush coarsely half quantity of methi dana and rai. Heat ½ cup oil in a pan, add ginger garlic paste with chicken, salt, cook until chicken water dries, add half the crushed fenugreek and mustard seeds, also add in aam choor, allspice and chili powder, remove. Heat remaining ¼ cup oil, add methi seeds, kalonji, rai with ½ tsp chili powder, add this to the above chicken mixture with lemon juice, whole green chilies, leave it on dum for 15-20 mins.

KOFTA NARMA DIL WRITTEN RECIPE :

Ingredients :
-Mince double grinded ½ kg
-Onion grinded 1
-Ginger garlic 2 tsp
-Salt 1 tsp
-Chili powder 1 tsp
-Allspice 1 tsp
-Roasted gram 3 tbsp
-Poppy seeds 1 tbsp
-Almonds 10

Ingredients for Gravy :
-Onion blended 1 raw
-Ginger garlic paste 2 tsp
-Chili powder 1 ½ tsp
-Salt 1 tsp
-Coriander powder 1 ½ tsp
-Turmeric ¼ tsp
-Allspice ½ tsp
-Yogurt 1 cup

METHOD FOR KOFTA :
Grind mince well, mix with ginger garlic paste, salt, chili powder, allspice, onion grinded, grinded gram, poppy seeds and almonds, mix very well, add ¼ cup water, make into balls.

METHOD FOR GRAVY :
Heat ½ cup oil, add blended onion, ginger garlic paste, fry well for 5 mins, add salt, chili powder, turmeric, coriander powder, fry well adding little water, add yogurt, fry till oil comes on top, add koftas, fry in masala for 5 mins, add 1 ½ cup water for gravy, cover and cook for 10 mins, lastly add allspice, chopped coriander leaves.
