Ingredients:
• 1kg Chicken Pieces (medium size)
• 275gm Thai Shallot
• 1 Clove Garlic
• 160gm Minced Soybean Paste
• 50gm Gula Melaka(palm sugar)
• 10pcs Pre-soaked Shitake Mushroom
• 4 Cups Water
• 4pcs Potatoes
• 180ml Cooking Oil
• 1 tbsp Black Soy sauce
• ½ tsp Salt(optional)
• 1 tsp Chicken Granule
Preparations:
• Blend Shallot till fine.
• Blend Garlic till fine.
• Remove mushroom stamps, clean & soak in water overnight.
• Clean & cut chicken into medium pieces.
• Remove potatoes skin, cut each into 4 pieces.
Cooking:
• Pour cooking oil into a heated wok.
• Fry the cube potatoes till light brown, remove & put aside.
• Add in blended shallot & garlic, sauté in the same oil till light golden color & gives out fragrant aroma.
• Add in the soybean paste, cook till it gives out fragrant soybean paste smell & oil appeared.
• Add in chicken pieces, then mushroom, gently turn the chicken & mushroom evenly for few times.
• Add in water, stir for a while until it is boiling.
• Lastly add the fried potatoes, gula Melaka, chicken granule & salt, slow down the fire.
• Gently turn it & let it boil for 20-25 mins till the gravy thicken, the chicken & potatoes become tender & cooked.
