Cherry Pineapple Habanero Spatchcock Chicken

Prep Time: 2 hours 20 mins
Cook Time: 90 mins
Cook Temp: 300F/350F

Ingredients:
Whole chicken
Cherry Pineapple Habanero Glaze
Apple wood chunks (use your favorite wood)
Favorite rub(s)
Spray butter

Prep Directions:
1. Spatchcock chicken and place in the refrigerator for at least 2 hours
2. Remove from the refrigerator and give it a few minutes to come close to room temperature
3. Season both sides of chicken
4. Preheat smoker to 300F

Cooking Directions:
1. Place chicken on smoker/grill
2. Grill for 40 minutes, then spray with butter
3. Grill for 20 minutes, then check to see temp of chicken and spray with butter
4. Once chicken reaches an IT of 140F, increase temp on smoker/grill to 350F
5. Glaze chicken at IT of 150-155F
6. Remove from smoker/grill when IT is 162F, let rest for 10 mins and enjoy!
