Full written recipe of Paneer & Veggies in Lemon Coriander Sauce with Veg Fried Rice
Prep time: 15-20 minutes

Serves: 3-4 people

Veg Fried Rice
Ingredients:
OIL | तेल 1 TBSP
STAR ANISE | चकरी फूल 1 NO.
RED CHILLI | लाल मिर्च 2 NOS.
SPRING ONION | स्प्रिंग ऑनियन 2 TBSP
BROCOLLI | ब्रोकोली 2 TBSP (FLORETS)
CARROTS | गाजर 2 TBSP (DICED)
FRENCH BEANS | फ्रेंच बीन्स 2 TBSP (CHOPPED)
SWEET CORN | स्वीट कार्न 2 TBSP
COOKED SELA BASMATI RICE | पके हुए सेला बासमती चावल 4 CUPS
SUGAR | शक्कर A PINCH
WHITE PEPPER POWDER | सफेद मिर्च पाउडर A LARGE PINCH
SALT | नमक TO TASTE
LIGHT SOY SAUCE | लाइट सोया सॉस 1 TSP
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL (CHOPPED)
Method:
Set a wok over high flame & let it get hot, then add oil & let it heat up as well.
Add star anise, red chilli, spring onion, broccoli, carrot, french beans & sweet corn, stir well & cook over high flame for 2-3 minutes.
Further add the cooked rice, sugar, white pepper powder, salt, light soy sauce & spring onion greens, stir well & cook for 2-3 more minutes.
Your quicks veggies loaded fried rice is ready.
Paneer & Veggies in Lemon Coriander Sauce
Ingredients:
OIL | तेल 1 TBSP
SPRING ONION | स्प्रिंग ऑनियन 2 TBSP
GINGER | अदरक 1 TSP (CHOPPED)
GARLIC | लहसुन 2 TBSP (CHOPPED)
GREEN CHILLI | हरी मिर्च 2-3 NOS. (SLICED)
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
HOT WATER / VEG STOCK | गरम पानी / वेज स्टॉक 500 ML
CARROT | गाजर 1 SMALL. (DICED)
MUSHROOM | मशरूम 1/3 CUP (QUARTERS)
MIXED BELLPEPPERS | मिक्सड बेल पेपर्स 1/2 CUP (DICED)
BOK CHOY | बॉक चॉय 2 STALKS (DICED)
WATER CHESTNUTS | सिंघाड़ा 3-4 NOS. (DICED)
LIGHT SOY SAUCE | लाइट सोया सॉस 1 TSP
WHITE PEPPER POWDER | सफेद मिर्च पाउडर A LARGE PINCH
SUGAR | शक्कर A LARGE PINCH
SALT | नमक TO TASTE
CORN FLOUR | कॉर्न फ्लोर 2 TBSP
WATER | पानी 4 TBSP
PANEER | पनीर 150 GRAMS (DICED)
SPRING ONION GREENS | हरे प्याज़ के पत्ते A HANDFUL
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
LEMON JUICE | नींबू का रस OF 1 LEMON
Method:
Set a wok over high flame & let it get hot, then add oil & let it heat up as well.
Further add spring onion, ginger, garlic, green chilli & fresh coriander, stir & saute over high flame for 2 minutes.
Add hot water or veg stock & bring it to a boil, then add all the veggies along with the chestnut, light soy sauce, white pepper powder, sugar & salt, stir well & cook for 2-3 minutes.
Then make a slurry by combining the corn flour with water in a separate bowl & add it to the sauce while stirring continuously.
Lastly add paneer, spring onion green, fresh coriander & lemon juice, stir well.
Paneer & veggies in lemon coriander sauce is ready, you can serve it with the rice in a plate together or you can serve both separately.
